Cranberry: Cranberry Pecan Muffins

Cranberry Pecan Muffins
Yield: 16 muffins

1/2 c. butter or margarine, softened
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. (8 oz.) sour cream
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. salt
3/4 c. coarsely chopped fresh or frozen cranberries
1/2 c. chopped pecans

Topping:
2 T. sugar
1/8 tsp. nutmeg


In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Add sour cream. Combine the next 5 ingredients, stir into creamed mixture just until moistened. Fold in cranberries and pecans. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
