Cranberry Ice

Cranberry Ice

1 (16 oz.) can whole cranberry sauce
1 teaspoon gelatin
2 Tablespoons cold water
1/2 cup light corn syrup
grated rind and juice of two oranges
1 1/3 cups buttermilk
2 egg whites -- stiffly beaten.


Heat and stir cranberry sauce until it comes to a boil. Remove from heat. Stir in gelatin which has been softened in cold water 3 minutes. Add corn syrup and let cool.

Stir in juice and buttermilk. Mix thoroughly and pour in shallow pan. Freeze until mushy. Beat until airy. Fold in beaten egg whites. Put in mold and freeze.

Unmold on plate and surround with grapes or spoon into sherbet glasses.
