Cranberry Nut Dessert
1 cup all-purpose flour
1 cup sugar
1/4 tsp. salt
2 cups fresh or frozen cranberries
1/2 cup chopped walnuts
1/2 cup butter or margarine, melted
2 eggs, beaten
1/2 tsp. almond extract
Whipped cream or ice cream, optional
Preheat oven to 350° F. and grease a 9-inch pie plate.
In a bowl, combine the flour, sugar and salt. Add cranberries and nuts; toss to coat. Stir in the butter, eggs and extract (mixture will be very thick if using frozen berries).
Spread into prepared pie plate. Bake at 350 for 40 min. or until a toothpick tests done. Serve with whipped or ice cream if desired.
Yield:8 servings
