Date Nut Squares

1 package (2 layer size) white cake mix
1 package (4 serving size) instant coconut cream or vanilla pudding mix
1/4 cup butter softened
3 eggs, divided
1/2 cup all purpose flour
1/3 cup brown sugar packed
1 teaspoon vanilla
1/4 cup water
1/8 teaspoon salt
1 - 8 ounce package (1 1/2 cups) pitted whole dates, snipped
1/2 cup chopped walnuts


Grease a 13 x 9 x 2 inch baking pan; set aside. Preheat oven to 350 degrees F.

In mixer bowl, combine cake mix, coconut cream or vanilla pudding mix, butter and 1 of the eggs. Beat on low speed of electric mixer about 1 minute or till crumbly. Set aside 3/4 cup crumb mixture. Press remaining crumb mixture into bottom of prepared pan. Bake in 350 degree oven for 15 minutes.

Meanwhile, in same bowl, combine flour, brown sugar, vanilla, the remaining 2 eggs, 1/4 cup water and 1/8 teaspoon salt, beat till smooth. Stir in dates and nuts; carefully spread over baked layer. Sprinkle with reserved 3/4 cup crumb mixture.

Bake in 350 degree oven 20 to 25 minutes. Cool - cut into squares and serve with whipped cream if desired.
