Fig Pie

Double crust pastry for 9-inch pan
2/3 c. sugar
2 Tbsp. flour
Pinch of salt
2 c. sliced fresh figs, drained
1 Tbsp. lemon or lime juice
Slivers of lemon peel
Butter
Milk


Preheat oven to 375.

Line 9-inch pie pan with thinly rolled pastry. (Use 2/3 of pastry) and flute edge well.

Mix together sugar, flour and salt. Sprinkle half of dry ingredients over pastry. Top with sliced figs. Sprinkle lemon juice and slivers over figs. Add remaining dry mixture. Dot generously with butter; lay on a circle of thinly rolled pastry (remaining 1/3 of pastry). Cut slits in pastry. Brush with milk and sprinkle with additional sugar.

Bake at 375 degrees for about 12 minutes, then reduce oven to 350. Continue baking until syrup oozes out around top pastry and figs bubble across pie.

Yield: 6 servings.
