Carmelized Figs
Serves 6

10 figs cut in half lengthways
2 cups brown sugar
half cup water
1 teaspoon ground cinnamon
1 tabsp butter

to serve:
250g tub marscarpone
1 packet almond bread

To cook the figs, place the figs in a single layer in a large frying pan.

Combine the sugar, water, cinnamon and butter in a small saucepan, bring to the boil and simmer for 5 mins, then brush liberally over the figs and pour the remaining syrup into the frying pan. Cook the figs over a low heat until the sugar has caramelised.

To serve, remove the figs with slotted spoon Place 3 figs halves on individual plates, spoon a little of the syrup over and serve with mascarpone and almond bread.
