Fruit Wine

3 pounds mixed fruit
3 pounds sugar
1 tsp. yeast nutrient
1 tsp. pectic enzymes
1/2 tsp. tannin
2 campden tablets, crushed
1 gallon of water

When the temp. is about 65 - 70 degrees F., add one package of wine yeast. Wait until it foams. Stir, once a day for 7 days. Strain off floating fruit. Siphon into another big sterilized container. Either bottle or wait for a few days and then bottle, waiting until the fermentation is complete. Wait for a few more weeks then enjoy.
