Fruit Salad for 100
2 honeydew melons
3 cantaloupes
2 (20 oz) cans pineapple chunks
5 (9 oz) cans orange sections
2 (20 oz) cans grapefruit sections
3 or 4 baskets strawberries
3 or 4 bunches grapes
Drain juice from canned fruits. Clean fresh fruit and cut in bite size pieces. Mix all fruit well. Serve with poppy
seed dressing on the side.
Poppy Seed Dressing for 50:
1 cup sugar
2 Tblsp Dijon mustard
2 Tblsp chopped onion
1/2 tsp garlic powder
3 Tblsp lemon juice
1/2 cup raspberry wine vinegar
2 cups salad oil
2-12/ Tblsp poppy seeds
Combine in a blender or food processor all ingredients, except the oil and poppy seeds and blend for a few seconds. Add the oil slowly through the feed tube, blending until all the oil is thoroughly mixed. Blend at least 15
seconds more. Finally, add the poppy seeds and blend a few more seconds. Keeps a very long time.
