Spicy Apple Blueberry Crunch
Better Homes and Gardens, June 1987

4 large cooking apples, peeled, cored and thinly sliced (about 5 cups sliced)
3/4 cup fresh or frozen blueberries
1 (4-serving-size) package regular butterscotch pudding mix
1/4 cup margarine or butter
2/3 cup rolled oats
1/2 cup all purpose flour
1/2 packed brown sugar
1/2 finely chopped pecans (optional)
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg


Place apples and blueberries in a microwave safe round baking dish. Sprinkle with 2 tbsps of the dry pudding mix. Set aside.

In medium microwave mixing bowl, micro cook margarine or butter, covered, on 100% power for 30 to 45 seconds or until melted. Add remaining pudding mix, oats, flour, brown sugar, pecans, cinnamon and nutmeg and stir until mixture is crumbly. Spoon over fruit mixture (dish will be full). Micro cook uncovered on 100% power for 11 to 13 minutes if using a 700 Watt power microwave or shorter if the power is higher, giving the dish a quarter turn every 3 minutes. The apples should be tender. Let stand for 30 minutes before serving.
