Gooseberry Fool

Gooseberry Fool
(serves 6) 

1 lb gooseberries 
1/2 c. sugar 
2/3 c. sour cream 
2/3 c. heavy cream, whipped 
mint leaves for decoration 

Place the gooseberries and sugar in a pan, cover and cook gently for about
15 min., until soft. Let the fruit cool slightly, then puree in a blender
or a food processor. Fold the sour cream into the whipped cream, then fold
into the gooseberry puree. Divide between 6 dishes and decorate with mint 
leaves. Serve with cookies of your choice.
