Grapefruit: LBJ Grapefruit Pie

LBJ Grapefruit Pie
(Makes one 9-inch Pie to serve 6)

9-inch Baked Pie Pastry
4 Pink Grapefruit
1/2 cup Granulated Sugar
1 Tbs. Cornstarch
3/4 cup fresh Grapefruit Juice
1 box Strawberry Gelatin (4-serving size)
Whipped Cream (optional)


Peel each grapefruit carefully, making sure to remove all the bitter pith. (Pith is the soft, white layer between the grapefruit's outer skin and the sections of fruit.) Cut the grapefruit into bite-size pieces. Drain the fruit in a strainer for 4 hours, making sure to collect all the juice as you strain. You should have 3/4 cup. If preferred, strain the fruit overnight.

Combine the sugar, cornstarch, and collected grapefruit juice in a small saucepan. (If the juice does not measure 3/4 cup, top it off with water or Fresca.) Bring the mixture to a boil over medium-high heat. Stir in the strawberry gelatin. Remove the mixture from the heat and allow it to cool slightly.

Spread the grapefruit over the bottom of the baked pie pastry. Pour the gelatin over the fruit, and refrigerate the pie for several hours before serving in order to give it time to set.
