Guave Duff

10 guavas, peeled and seeded (keep seeds)

Dough Sauce:
2 T. shortening 3 eggs
3 T. baking powder 1 c. sugar
2 c. flour 3 oz. melted butter
1 c. water or milk 3 oz. evaporated milk
pinch salt brandy or rum (optional)


Cook guava shells with a little sugar, set aside. Cook guava seeds with a little sugar, cool and rub through strainer, discard seeds.

Combine flour,shortening,baking powder and salt. Rub together until mixture is sandy. Add water, mix into a ball, let rest a few minutes. Roll out oblong with a rolling pin.

Add guava shells. Roll up the dough with the shells in the center. Place into foil, seel the ends and bake at 350 degrees. Take the pulp from the seeds, mix with the eggs and sugar.

Add melted butter and milk. Slice the cooled duff as it looks like a pinwheel and serve with the sauce.
