Lemon Pudding or Filling

4 eggs
1-1/2 cups sugar
3 Tblsp. cornstarch
2-1/2 lemons or 6 Tblsp. lemon juice
2 cups water


Beat eggs well. Mix sugar and cornstarch together and add to beaten eggs, beating slowly. Add lemon juice and water. Cook in double boiler or over low flame, stirring constantly until thick or until bubbles appear. Cool. Use in jellyroll or serve as pudding.
