Zesty Lemon Curd

3 eggs beaten
2 cups sugar
1/2 lb. butter cut into tablespoon sizes
3/4 cup lemon juice
grated lemon peel from one lemon


In the top of a double broiler, combine all ingredients. Cook and stir over boiling water until thickened like pudding. Remove from heat and cool. Chill until ready to serve. Spread on muffins or rolls, or serve over waffles or ice cream. Keeps in fridge for 2 weeks.
