Florida Jerk Chicken with Sherried Mangoes
1/4 cup water
1/4 cup lime juice
1/2 cup sugar
2 teaspoons pureed ginger root
1/2 pound boneless chicken breast
2 tablespoons jerk seasoning
1 tablespoon butter
2 each Florida mango, sliced
1 cup dry sherry
Bring water, lime juice, sugar and ginger to a boil. Cool and add chicken, marinate 2 to 24 hours.
Remove chicken from marinade and coat with jerk seasoning and sauté in butter. Remove chicken from pan and add mango and sherry; cook until mango is heated thoroughly.
