Mango Bread

21/2 cups finely diced mango
1 Tbsp lemon juice
2 cups flour
11/2 tsp cinnamon
11/2 tsp baking soda
1/2 tsp salt
11/4 cups sugar
3 eggs
3/4 cup vegetable oil
1 cup chopped nuts


Grease and flour two 9x5 inch loaf pans. Preheat the oven to 325 degrees.

Sprinkle the diced mango with lemon juice, and set aside to marinate.

In a large bowl, mix the flour, cinnamon, baking soda, salt and sugar. In another bowl, beat the eggs and oil together. Blend the mangos into the egg and oil mixture. Mix the mango mixture into the flour mixture. Add the nuts and blend well. Pour the batter into the two pans, divide equally. Bake for 50 to 60 minutes. Makes two loaves.
