Mangoes and Sticky Rice

2 cups glutinous rice ( sticky or sweet rice), washed, soaked overnight (8 hours), and drained
1/2 cup sugar
1 tsp salt
1 cup thick coconut milk

Topping:
1 cup coconut milk
1/2 tsp salt
1/4 cup sugar
5 ripe mangoes, peeled, halved, stone removed, each half cut into 4 transverse slices


Place the rice on cheesecloth and steam over water for 20-25 minutes or until the rice is soft.

Dissolve the sugar and salt in 1 cup of thick coconut milk over medium heat. Bring slowly to a boil. Remove from heat immediately. Add the cooled sticky rice to the hot coconut milk. Stir until well mixed. Cover and let stand 30 minutes.

Prepare the topping by bringing 1 cup coconut milk slowly to a boil. Add salt and sugar. Stir to dissolve sugar.

Reassemble the mango halves on a plate. Spoon the sticky rice in a mound beside it. Spoon the topping over the sticky rice. Serve immediately or refrigerate.
