Berry Crisp
(Foodwine recipe request)
6 c. berries (blueberries, strawberries, raspberries)
1 tbsp. instant tapioca
1 1/2 c. plus 2 tbsp. sugar
1 1/2 c. flour
1 stick butter, cut into 1/2 inch cubes
1 tbsp. grated zest
Preheat oven to 350 degrees in a 9x13 inch pan. Mix berries with tapioca and 2 tablespoon sugar. Place in pan.
Combine sugar, flour, butter and lemon zest thoroughly and spread over berries.
Bake at 350 degrees for at least 35 minutes or until lightly browned.
Serves 6 to 8.
