Pritikin-Style Fruit Loaf

25 dried apricots
10 dried figs
10 dried prunes
5 dried pears, halved
2 cups of water
1 large or 2 small bananas
1 cup of wholemeal self-raising flour
1/2 cup of almond meal
1/4 teaspoon of cinnamon.
1 teaspoon finely grated orange rind.


Preheat oven to 180ºC (350ºF). Grease a 20cm (8") long loaf cake tin


Place all of the dried fruits in saucepan with the water. Bring to the boil, cover and simmer for 5 minutes. Remove 10 apricots from the pan and blend these to a puree with the cooking liquid and banana. Place in a large mixing bowl.

Mix flour and almond meal with the fruit puree and stir in all the cooked fruits, cinnamon, and orange rind. Spoon mixture into prepared cake tin and bake in oven for about 40 minutes. Allow to cool before unmoulding onto a wire rack.
