Rhubarb Crunch
1 c. oatmeal
1 c. brown sugar
1 c. flour
1/2 cup butter or margarine
4 cups rhubarb, cut up
1 c. sugar
1 c. boiling water
1 T. cornstarch
1 teaspoon vanilla
Mix oatmeal, brown sugar and flour together. Melt butter or margarine and add to above mixture. Put 2/3 of this mixture in the bottom of a 9X9 inch pan. Put rhubarb on top.
Cook sugar, water and cornstarch;
stir until it starts to thicken. Add vanilla; pour over rhubarb. Put rest of oatmeal mixture on top. Bake 1 hour at 350.
You can use strawberries, cherries, and raspberries or apples in place of rhubarb.
Top with ice cream or Cool Whip when serving, if desired.
