Mixed Fruit: Citrus Salsa

Citrus Salsa

1 grapefruit
2 oranges
1 lemon
1 lime
1 tsp. extra-virgin olive oil
1 Tbsp. minced red onion
1/2 tsp. minced cilantro
Sea salt


With a sharp paring knife, trim the skin of all the citrus. Cut close enough to remove the white pith
between the outer skin and the "meat." Cut between the membranes and remove all edible fruit. Carefully pick out the seeds and cut the larger pieces in half.

In a glass mixing bowl, gently toss the citrus with the olive oil, onion and cilantro. Season with a pinch of salt.

Serve over grilled tuna, salmon, swordfish or chicken breast.

Makes 1 1/4 cups.

Nutritional values per 1/4 cup: 39.3 calories, 1g fat, 3.5g protein, 0mg cholesterol, 412mg sodium.
