Cranberry, Mandarin Orange, Feta, and Walnut Tossed Salad with Balsamic Vinaigrette

1 (18 oz.) bag mixed salad greens -- or torn romaine and/or red leaf lettuce with shredded carrot added if desired
1 bunch fresh spinach -- cleaned well, stems removed, and spinach torn
2 (11-15 oz.) cans mandarin oranges, drained (save juice)
1 (6 oz.) bag sweetened dried cranberries
1 (4 oz.) package crumbled feta cheese
3/4 cup coarsely chopped candied or toasted walnuts

Dressing:
1/4 cup balsamic vinegar
1/4 cup reserved mandarin orange juice
2 T. honey
2 t. Dijon mustard
1/4 t. ground black pepper (1/4-1/2 t.)
good pinch of Kosher salt
1/4 cup extra virgin olive oil


For dressing, whisk vinegar, mandarin juice, honey, mustard, pepper, and Kosher salt in small bowl. Slowly add oil in a thin stream, whisking constantly until well blended. Refrigerate.

To caramelize the walnuts, combine walnuts and about a 1/4 cup of sugar in a skillet and toast over med. or med-low heat . Stir frequently until sugar melts and coats walnuts. Cool on foil or wax paper.

Layer salad greens, mandarin oranges, cranberries, cheese and walnuts in shallow salad bowl or on large serving platter. Shake or mix salad dressing and pour over salad. Toss gently to coat. Serve immediately.
