Fruit Cocktail Pudding Cake

2 c. sifted flour
1 1/2 c. sugar
2 tsp. soda
1/4 tsp. salt
2 beaten eggs
1 (1 lb. 12 oz.) can fruit cocktail


Sift together flour, sugar, soda and salt. Add eggs and fruit cocktail with juice mixing well. Pour into a greased and floured 8 or 9-inch tube pan. Bake at 300 degrees for 1 hour or until pick inserted into center of cake comes out clean. Cool 10 or 15 minutes, then remove from pan and place on wire rack. Ice with Pudding Icing.


Pudding Cake Icing:
1/2 c. butter or margarine
1 c. confectioners sugar
1/2 c. evaporated milk
1 egg yolk
1 Tbsp. vanilla
1 c. shredded coconut
1/2 c. chopped nuts


Place butter, sugar, milk and egg yolk in heavy sauce- pan. Bring to boil, cook 2 minutes, stirring constantly. Add vanilla, coconut and nuts, mixing well. Cool icing slightly, and spread on top of warm cake. If desired, a whipped topping will serve just as good.
