Mixed Fruit: Quick Cranberry Salad

Quick Cranberry Salad

3 c. whole cranberries, fresh or frozen
3/4 c. granulated sugar
2 1/3 c. miniature marshmallows
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped walnuts
1 c. whipping cream, or use cool whip

Put cranberries in food processor, and coarsely chop (frozen berries chop easiest). Add sugar and refrigerate overnight.

Next day, add marshmallows, pineapple and nuts. Whip cream, or use Cool Whip, and fold into berry mixture. Spoon into bowl, cover and refrigerate until ready to serve. Can also be frozen in 8" square dish.

Serves 6-8
