Orange Oatmeal Rolls

1 Package (16 ounces) hot roll mix
1 cup sweetened crunchy oatmeal cereal
1 cup very warm orange juice (120 to 130 degrees)
2 tablespoons honey
2 tablespoons butter or margarine, melted
1 egg
1 tablespoon orange zest
1/2 cup coarsely chopped pecans
vegetable cooking spray
1 cup sifted confectioners sugar
5 tablespoons orange juice


In a large bowl, combine hot roll mix and yeast from roll mix with cereal. Stir in 1 cup hot orange juice, honey, melted butter and orange zest; stir until well blended. Stir in pecans. Turn onto a lightly floured surface and knead 3 minutes or until dough becomes smooth and elastic.

Cover dough; allow to rest 10 minutes. Shape dough into 18 (2-inch )balls. Place in 2 greases 8x5-inch aluminum foil baking pans. Spray top of dough with cooking spray, cover, and let rise in a warm place (80 to 85 degrees) for 1 hour or til almost doubled.

Preheat oven to 375.

Bake 15 to 20 minutes or until golden brown. Cool in pans.

Combine confectioners sugar and orange juice in a small bowl; stir until smooth. Drizzle over rolls. Allow icing to harden. Store in airtight container.

Yield: 2 pans rolls, 9 rolls each
