Peach Brandy

1 Large Cake Yeast
3 (#2 1/2) Cans Sliced Peaches
4 Boxes Raisins
3 Lemons, sliced
10 lbs. Sugar
3 Gal. Water.


Boil Water. Add sugar and boil 5 minutes. Cool. Add peaches, lemons and yeast. Place in a 5 gal. crock and cover. Stir at the same time of day everyday for 7 days. On the 7th day, add raisins and stir. Let sit for 21 days.

Strain and bottle. Let sit uncorked for 10-14 days. Strain and cork.
