Dessert Omelets

4 eggs, separated
1/4 c sugar
pinch of salt
1 tsp water
2 tbsp clarified butter
Fillings (recipes follow)


Cream egg yolks and sugar together, then set aside. Add water and salt to egg whites and beat until stiff. Fold yolk mixture into stiff whites.

Melt butter in a divided omelet pan. Cook as a regular omelet, adding one of fillings.


Peach Filling:
2 c peaches, sliced
2 tbsp butter
1 tsp brown sugar


Glaze peaches in butter and sugar over medium heat. Add to omelet before folding. Dust with powdered sugar and serve.


Orange Filling:
1/4 c orange juice
1 tbsp grated orange rind


Fold into omelet batter just before pouring into pan.
