Peach Filled Coffee Cake

1 1/2 c flour
1 c sugar
2 tsp baking powder
2 tsp grated lemon peel
1/8 tsp salt
1 c butter, softened
4 eggs
1 can (29 oz ) sliced cling peaches, well drained


Preheat to 350° and grease a 9 x 13 pan.

In a large bowl, combine flour, sugar, baking powder, lemon peel, salt, butter, and eggs. Beat at low speed of electric mixter until well mixed, scraping constantly. Increase the speed to high and beat 4 minutes, scraping occasionally. Spread into baking dish. Arrange peaches on top of the batter and sprinkle with topping.

Topping:
1 c flour
1/2 c butter
1/4 c sugar
1 tsp grated lemon peel


Knead ingredients together to form a soft dough. Bake at 350 for 40 to 45 minutes or until golden brown; toothpick inserted in center should come out clean.

Serve warm. 12 servings.

A can of pears may be substituted for peaches. Margarine may be substituted for butter.
