Peach: Oven Fried Chicken with Peaches and Biscuits

Oven Fried Chicken with Peaches and Biscuits

1 cup flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/4 cup shortening (half butter)
1 cut-up frying chicken
1 large or 2 regular cans peach halves


Heat oven to 425° (hot).

Mix flour, salt, pepper and paprika in paper bag. Put shortening in oblong pan, 13x9x2" and set in oven to melt. Shake 3 or 4 pieces of chicken at a time in bag to coat thoroughly. Place chicken, skin-side-down, in single layer in hot shortening. Bake 45 minutes, turning chicken over halfway through baking time.

Remove from oven, push chicken to one end of pan. Place peach halves on top of piled chicken, drizzling syrup over chicken and in end where biscuits are to be placed. Place biscuits in single layer on other end.

Return to oven and bake another 15 minutes, or until biscuits are lightly browned and chicken tender. Biscuits will need to be removed with spatula because the bottoms will be covered with the "goodies" from the chicken and peach juice.
