2 (3 oz) packages of peach gelatin
1 (8 oz) can crushed pineapple, undrained
2 cups of buttermilk
1 (8 oz) container of whipped topping (Cool Whip, etc.)
Vegetable cooking spray
4 Cups of sliced fresh peaches
1/4 cup of peach Schnapps
Combine gelatin and pineapple (with juice) in a medium saucepan over low heat. Stir until Gelatin dissolves. Remove from heat and stir in buttermilk and whipped topping.
Pour mixture into an 8 cup mold (bundt pan or flan mold or angel cake mold) sprayed with the cooking spray. Cover and refrigerate 1 hour or until firm. Combine Peach slices with Schnapps and refrigerate for 1 hour.
Unmold onto serving tray. Arrange peach slices around dessert and in the center
