Peach Mousse
4 cups chopped peaches
1 3/4 cups confectioners sugar
2 cups heavy cream
pinch salt
1 tsp vanilla
1/2 tsp apple pie spices
Peel and chop peaches, add sugar. Place in refrigerator for 1 hour. Drain peaches and mash. Drain again and reserve juice. In chilled bowl, combine whipping cream, vanilla, salt and spice. Add juice from peaches and whip until creamy. Fold in mashed peaches and pour in to mold or parfait glasses. Freeze until firm.
