Peachy Upside Down Cake

4 tbsp. of margarine (divided)
3/4 cup of sugar (divided)
1-1/2 cups of peeled, sliced peaches
1 cup of all-purpose flour
1-1/2 tsp. of baking powder
1 large egg
1 tsp. of vanilla extract
1 tsp. of butter extract
1/2 cup of skim milk.


Preheat oven to 350°F. Coat a 9" round cake pan with nonstick cooking spray. Melt 1 tbsp. of the margarine and spread it on the bottom of the prepared pan. Sprinkle 1/4 cup of the sugar over the bottom of the pan and arrange the peach slices in a circle on top of the sugar. Set this aside.

In a small bowl, combine the flour and baking powder. Set it aside. In a mixing bowl, beat the remaining 3 tbsp. of margarine with the remaining 1/2 cup of sugar. Add the egg and extracts. Add the flour mixture alternately with the milk (beginning and ending with the flour). Pour the batter carefully over the peaches.

Place the cake mixture in the oven and bake it for 30 to 35 minutes, or until a toothpick comes out clean. Transfer the cake to a wire cooling rack; cool it for 5 minutes; then invert the cake onto a large serving platter and cool it completely before slicing.

Add a dollop of vanilla ice cream or whipped cream on top and, you’ve got yourself a tasty, peachy, summertime treat!
