Butter Baked Peaches with Almonds
6 not too ripe peaches,skinned
1/2 tsp pure vanilla essence
1/2 tsp pure almond essence
3 tbsp water
1 level tbsp cornflour
2 oz blanched,slivered almonds
4 oz sugar
2 oz unsalted butter cut into small pieces
Lightly oil a medium roasting tin and preheat oven to 180c/350f/gas 4
Cut peaches in half remove stones and cut each half into 3 wedges.
Put the vanilla and almond essences in a medium bowl with the water and mix in the cornflour until dissolved. add the peaches to the bowl and toss gently but thoroughly until coated in the liquid.
Turn into the oiled tin. They should fit snugly in one layer. Scatter over the almonds and sugar and dot with the butter. Bake for 30 minutes then serve immediately with chilled whipped,double or sour cream or creme fraiche.
