Chocolate Fruit Log

2/3 cup sifted all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 eggs
2/3 cup sugar
1/2 teaspoon vanilla extract
2 squares (2 ounces) melted unsweetened chocolate
1/4 teaspoon soda
2 tablespoons sugar
1/4 cup cold water


Preheat oven to 375° F., grease the bottom of a 15 x 10 1-inch jelly roll pan and line with wax paper and grease again then flour.

Sift together the flour, baking powder and salt. Set aside.

Beat 4 eggs with sugar and vanilla until thick and ivory colored. Fold in the dry ingredients, gently but thoroughly, using a wire whip or rubber spatula.

Combine the melted chocolate with the soda, sugar and water. Fold gently into batter. Spread in prepared pan. Bake at 375 degrees for 12 to 15 minutes. Turn out immediately onto towel sprinkled with powdered sugar. Remove paper. Roll in towel starting with a 10 inch end. Cool. Unroll and spread with filling. Roll again; drizzle with glaze. Chill

Peach Filling:
Cream 1/3 cup (3 ounce package) cream cheese. Add 2 tablespoons sugar, 1/4 teaspoon almond extract and 1/8 teaspoon salt. Blend in 1 cup canned peaches well drained and mashed. Beat 1 cup whipping cream until thick. Fold into peach mixture.

Chocolate Glaze: Melt 1 square (1 ounce) unsweetened chocolate with 1 tablespoon butter. Blend in 3/4 cup sifted powdered sugar and 1 teaspoon vanilla. Add 1 to 2 tablespoons milk gradually until of spreading consistency.
