Puff Pancake with Peaches and Sausage
Puff Pancake:
1 tbsp. butter
2 large eggs, beaten
1/2 cup milk
1/2 cup flour
1 tbsp. sugar
1/8 tsp. salt
Filling:
1 pkg. (8 oz.) Brown 'N Serve sausage, Maple Links
1 can (16 oz.) sliced peaches, drained
1/3 cup maple flavored syrup
dash of ground nutmeg
Pancake: Preheat to 400.
Place butter in a 9 inch pie pan and heat in oven until melted. Whisk together remaining ingredients. Pour into pan but do not stir. Bake for 13 to 15 minutes, until golden.
While pancake bakes, cut sausage links into halves. Combine all filling ingredients in a large skillet and bring to a boil. Simmer until the syrup has thickened and glazed the sausage and peaches.
Spoon filling into pancake and serve immediately. Makes 4 servings.
