Peaches with Honey and Wine
Source: Taste Cookbook by Anneke Manning
6 medium, firm, ripe peaches, washed
1 cup white wine (Reisling recommended)
1/2 cup water
1 cinnamon stick
1 tsp vanilla essence
1/2 cup honey
Thick cream or vanilla ice-cream, to serve
Preheat oven to 350.
Place whole peaches in a shallow 8 x 12 inch ovenproof dish
Combine wine, water, cinnamon stick and vanilla essence in a jug and pour over peaches.
Drizzle evenly with honey.
Bake 35 minutes, basting with liquid every ten minutes or so, or until peaches are tender.
Serve peaches and their lquid wam or at room temperature with cream or ice-cream.
Serves 6.
