Peachy Stuffed French Toast

1 (1-pound) loaf unsliced french bread
1 (8-ounce) package cream cheese softened
1/2 cup peach preserves
5 eggs
1 1/4 cup milk
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
Dash ground nutmeg
2 tablespoons butter or margarine
Maple Syrup


Cut French bread into 16 slices about 1 inch thick. Then, cut a pocket in each slice by cutting from the top crust almost to the bottom crust.

In small mixing bowl, stir together the softened cream cheese and peach preserves. Spoon about 1 tablespoon of the cream cheese mixture into each pocket in the bread.

In mixing bowl beat eggs, milk, vanilla, cinnamon and nutmeg til combined. Dip the bread slices into the egg mixture.

On a griddle or in a skillet heat butter or margarine. Fry stuffed bread slices over medium heat til golden brown, turning once (allow 1 1/2 minutes for each side). Serve with maple syrup. Makes 16 slices.
