Persimmon Pudding

Persimmon Pudding

1/2 cup butter
4 - 6 tablespoons of sugar (according to taste)
1 pint persimmons (after run thru sieve)
3 egg yolks, well beaten
1 pint milk
2 1/2 C flour
2 heaping tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. salt
3 egg whites, stiffly beaten


Cream butter and sugar. Add persimmons and egg yolks. Mix until well beaten. Sift together flour, baking powder, nutmeg, cinnamon and salt. Add alternately with milk. Fold in beaten egg whites. Bake in greased and floured muffin tins or a cake pan at 375 degrees for 30-40 minutes. The pudding will rise, then shrink.
