1 envelope unflavored gelatin
1/4 cup cold water
1 (20 oz.) can crushed pineapple
1/2 cup sugar
juice of 1/2 lemon
1 cup grated cheddar cheese
1 cup whipping cream or 9 oz. tub Cool Whip
Soften gelatin in cold water. Drain pineapple and combine juice and sugar in saucepan. Bring to a boil and remove from burner. Add gelatin and stir until dissolved. Cool.
Mix in lemon juice and pineapple. Chill. When mixture begins to thicken fold in grated cheese and whipped cream or Cool Whip. Turn into 9 in square pan. Chill until firm.
