Pineapple Banana Bread

1 1/2 cups sugar
1/2 cup shortening
2 eggs
3 medium bananas, smashed
1 cup crushed pineapple, drained
10 maraschino cherries, chopped
2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts


Preheat oven to 350 degrees and grease and flour two 4 x 8 inch loaf pans.

Cream sugar and shortening in a large bowl until light and fluffy. Add eggs and mix well. Blend in bananas. Add pineapple and mix well. Stir in cherries.

Combine flour, baking soda, baking powder and salt and mix well. Stir this into banana mixture. Stir in walnuts. Pour into prepared pans.

Bake for 40 to 50 minutes or until loaves test done. Cool in pans on a wire rack for 5-10 minutes. Turn onto wire rack to cool.

Yield: 2 loaves"
