Cajun Cake
2 C flour
1 1/2 C sugar
2 t soda
1 (20 oz) can crushed pineapple
2 eggs beaten
Mix above ingredients and bake in 12 x 9 greased and floured pan in a preheated 350 oven for 25 minutes.
While cake is baking make frosting.
Frosting:
1 stick butter
1 C sugar
1 (5 oz) can of evaporated milk
1 teaspoon vanilla
1 cup flake coconut
1 c pecan chopped
Bring butter sugar and milk to boil for 10 minutes; remove from heat.
Add vanilla, coconut and pecans.
Frost cake while still warm.
Note: This cake has no shortening!
