Company Salad
2 (4 serving size) pkgs. Lemon Jello
3 cups boiling water
1 (20 ounce) can crushed pineapple, drained
1 1/2 cups miniature marshmallows
3 bananas, cubed
1 cup nuts, chopped
1 cup pineapple juice with water to make 1cup
1/2 cup sugar
1 1/2 Tbl. flour
1 egg slightly beaten
1/2 pint whipping cream, whipped
grated cheese
Dissolve Jello in boiling water. Cool and add pineapple, marshmallows, bananas and nuts.
Chill in glass casserole until firm.
Heat pineapple juice in top of double boiler. Combine sugar, flour and egg. Mix with pineapple
juice and cook until thick, stirring constantly. Cool and fold into whipped cream. Spread over gelatin
mixture. Top with grated cheese when served. Keep cold until ready to serve.
