Pineapple Cream Squares
Mix base:
2 1/2 cups vanilla wafer crumbs
1/2 cup butter
1 1/2 cups icing sugar
Filling:
2 eggs beaten
juice and rind of 1 lemon
1/2 pint cream (beaten)
1 tablespoon white sugar
1 tsp. vanilla
1/8 tsp. salt
1 can crushed pineapple (drained)
Combine mix base and press into an 8 x 8-inch pan.
Cream butter and sugar together add eggs cream white sugar, vanilla and salt.
Spread pineapple over base and pour cream over it.
Chill until firm.
If desired, sprinkle with toasted coconut.
