Pineapple Dream Cake

2 1/4 cups all-purpose flour
1 tablespoon baking powder
1 cup milk
2 eggs
1 1/4 cups sugar
1 teaspoon salt
1/2 cup CriscoŽ shortening
1 teaspoon almond extract

Pineapple Dream Filling and Frosting:
1 pound can crushed pineapple -- with juice*
1 package Dream Whip -- prepared
1/2 teaspoon almond extract
4 ounces regular coconut cream pudding mix
1/2 cup cold milk
1/4 cup chopped Maraschino cherries


Preheat oven to 350° F.Grease and flour bottoms of two 8-inch round layer pans.

In a large mixer bowl, sift flour, sugar, baking powder and salt. Add milk and Crisco. Blend well on lowest speed of mixer; beat 1-1/2 minutes. Add eggs and almond extract, continue beating 1-1/2 minutes.

Pour batter into prepared pans. Bake at 350 F. for 30-35 minutes. Remove from pan after cooling in pans 5 minutes. Cool completely.

Slit layers in half crosswise; you should have four thin layers. Fill and frost.

For frosting: combine crushed pineapple (*1-lb 4-oz. can) with pudding mix; mix well in a pan. Cook, stirring constantly, till very thick and clear. Chill thoroughly.

Prepare Dream Whip, using milk and almond extract. Combine half of prepared topping with chilled pineapple mixture. Stir in cherries.

Spread between layers and on top of cake. Frost sides of cake with the leftover topping mix. Refrigerate until time to serve.
