Fresh Pineapple Cabbage Slaw

1 1/2 c. finely shredded or chopped cabbage
1/2 c. raisins
1/4 c. flaked coconut
1/2 c. finely diced celery
1 c. fresh pineapple, cut into 1/2 inch cubes, drained

Dressing:
1/4 c. each: plain yogurt and mayonnaise
1/4 tsp. seasoned salt
1/4 tsp. Dijon style mustard
paprika
celery leaves for garnish


Place cabbage into bowl. Set aside.

Soak raisins in hot water for 5 minutes. Drain and add to cabbage. Stir in the coconut, celery and pineapple and lightly mix together. Set aside.

Combine the dressing ingredients, mixing well. Fold dressing into the cabbage mixture and mix until well combined. Chill 1 hour or longer to blend flavors.

Before serving, sprinkle lightly with paprika. Garnish with celery leaves and serve. Makes 4 servings.
