Pineapple Squares
3 cups of graham wafer crumbs
1/2 cup of butter or margarine
1/2 cup of butter
1 and 1/2 cups of icing sugar
2 egg yolks
1/2 pint of whipping cream, stiffly beaten
1 cup of well drained crushed pineapple
Combine crumbs and 1/2 cup butter and press into an 8 x 8 or 9 x 9-inch pan.
Mix 1/2 cup butter, icing sugar and yolks and spread on top of wafers. Top with whipped cream and pineapple. Sprinkle a few reserved crumbs on top and put in the freezer for at least 3 hours. There should still be ice crystals on the topping when served.
