Pineapple Zucchini Bread
3 eggs
2 cups sugar
1 cup vegetable oil
2 tsp. vanilla
2 cups coarsely shredded zucchini
1 (8 1/2oz.) can crushed pineapple, drained
3 cups all-purpose flour
1 tsp. salt
2 tsp. baking soda
1 1/2 tsps. cinnamon
3/4 tsp. nutmeg
1/2 cup finely grated pecans
Preheat oven to 350.
Grease two loaf pans and set aside.
Beat eggs with electric mixer until frothy.
Beat in sugar, oil, and vanilla until well blended.
Stir in zucchini and pineapple. Mix together all dry ingredients and set aside.
Add dry ingredients and mix well.
Stir in pecans.
Pour batter evenly into prepared loaf pans and bake for 50-60 minutes, test
for doneness.
