Maduros (Fried Sweet Plantains)

Peel and bias cut (diagonal) into one-inch thick slices. For best flavor, sautee in a combination of butter and corn oil (2 Tbl. butter to 4 Tbl. corn oil). Heat the oil and butter, sauté the pieces at medium heat until they are brown, about 3-4 minutes per side. Watch them carefully - do not let them burn!

Your plantains need to be black, black, black! The more black spots the better! They are very ripe and sweet at this point.
