Sour Cream Pumpkin Cake
Batter:
1/2 cup butter
3/4 cup sugar
1 tsp vanilla
3 eggs
2 cup flour
1 tsp baking powder
1 tsp baking soda
1 cup sour cream
Pumpkin Mixture:
16 oz. can pumpkin
1 egg beaten
1/3 cup sugar
1 tsp pumpkin pie spice
Streusel:
1 cup brown sugar
1/3 cup butter
2 tsp cinnamon
1 cup chopped nuts
Preheat oven to 325° F.
For batter: Cream butter sugar and vanilla together; add eggs and beat well.
Combine flour, baking powder, and baking soda.
Add dry mixture to butter mixture alternately with sour cream.
Spread 1/2 of the batter into 9x13 ungreased pan.
Sprinkle 1/2 of streusel over batter.
Spread pumpkin mixture over streusel.
Put remaining batter carefully over pumpkin.
Spread remaining streusel over top.
Bake at 325 50 to 60 min.
For filling: Combine all ingredients well, set aside.
For Streusel: Cut butter, sugar, and cinnamon until blended; stir in chopped nuts.
