Raisin Pie (Funeral Pie)

Pastry for 2 crust 9 inch pie, unbaked
3 tablespoons cornstarch
1/2 cup sugar
1 3/4 cups water
2 1/2 cups seedless raisins
2 tablespoons fresh lemon juice
2 teaspoons grated lemon rind
2 tablespoons butter

Preheat oven to 400 F.

Mix cornstarch with sugar. Gradually stir in water. Add the raisins and cook over low heat, stirring constantly until mixture thickens. Remove from heat, add raisins, lemon juice, lemon rind and butter.

Pour into prepared crust. Cover with top crust and make slits for steam to escape. Bake for 30 minutes or until crust is nicely browned. Serve warm.
